摘要:PURPOSE:To enable production of egg yolk powder, having excellent
preservation quality, readily soluble in water and useful for discriminating egg yolk
reaction of a microorganism by adding and blending at least one or more of lactose,
common salt and dextrin therewith. CONSTITUTION:An eggshell of an egg with the shell
such as hen's egg is sufficiently sterilized with an alcohol, etc., and then transferred into a
clean bench to break the egg and separate the egg yolk. One or more of previously
sterilized lactose solution, common salt solution and dextrin solution are then added,
mixed with the resultant liquid egg and freeze-dried to afford egg yolk powder, which is
subsequently used for discriminating egg yolk reaction of a microorganism as follows.
The egg yolk powder is dissolved in sterile water to provide an egg yolk solution, which
may be added to a culture medium such as mannitol common salt culture medium for
normal microorganisms Thereby, since the egg yolk powder is powdery, the preservation
quality is excellent and solubility in water is good. The egg yolk powder can be dissolved
in the sterile water without requiring labor. Discrimination equal to that with
conventionally used egg yolk liquid can be carried out.
